Origin
Farmed caviar from Italy. This is a moderately sized species and weighs between 8 and 40Kg. It is raised in many farms worldwide because of its relatively quick maturation. It is native to the fluvial basins of Siberia (from the Ob river to the Kolyma river) and in the Baikal Lake basin.
The Siberian sturgeon is one of the smallest sturgeons in the world, native to the fluvial basins of Siberia. It matures in around five years, producing firm pearls that vary in size depending on age, and are dark grey to amber in colour. It is loved by gourmands for its versatility being very distinctive and full of character.

This sturgeon takes around 5 years to be matured for caviar production.
Its caviar size is from 2. 5 to 2. 8 mm in diameter in shades of dark grey and amber.
Tasting notes
An extremely versatile caviar with a quite marked taste. and is rich in Omega 3. Firm pearls that literally pop in the mouth releasing a unique clean crisp nutty flavour.
